Vegan Artichoke Recipe



Roasted Artichokes with Lemon & Garlic


Ingredients:

  • - 4 large artichokes

  • - 1 lemon, juiced

  • - 3 cloves garlic, minced

  • - 1/4 cup olive oil

  • 1 tbs of chopped fresh chives

  • - Salt and pepper, to taste


Instructions:


1. Preheat oven to *400.

2. Cut off the top third of each artichoke and trim the stems.

3. Place the artichokes in a large pot of salted boiling water and cook for about 20 minutes, or until the leaves can be easily removed.

4. Remove the artichokes from the pot and let them cool slightly.

5. In a small bowl, mix the lemon juice, garlic, olive oil, chives, salt, and pepper.

6. Brush the artichokes with the lemon garlic aioli and place them on a large sheet pan

7. Roast in the oven for about 10 minutes, or until the artichokes are lightly charred and tender.

8. Serve with the remaining aioli on the side.
